Sourcing fish filleting knives from China

Fish filleting knives from China normally carry 8% UK duty; separate blades and base-metal handles bring the relevant range to 2% to 8%. Food-contact materials must be safe for their intended use, and knife designs and sales need legal checks. Agree blade flex and wet grip before ordering. Duty on fish filleting knives and parts

Read from the UK Trade Tariff on 30 September 2026, heading 8211 covers knives with cutting blades and their blades. Fixed-blade fish filleting knives fall within other knives having fixed blades at 8% duty for goods from China. Assorted knife sets also carry 8%; separate blades carry 6% and base-metal handles 2%. The supplied record lists no anti-dumping or countervailing duty, steel measure or suspension.

The tariff attaches ivory import controls to fixed-blade knives and assorted sets, and CITES import controls to all listed lines. Before buying an ivory-containing item, check that it is registered or certified as exempt. For handles containing CITES-listed material imported from China into Great Britain, arrange the applicable import and Chinese export documentation. An item made from an animal or plant part can be a CITES specimen. Confirm the material and attached declaration requirements with your customs broker.

Confirm the blade construction, whether goods arrive as finished knives or parts, and any assortment using the commodity code guide. For related knives across the wider heading, see the butchers' boning knife guide.

Specify blade flex and grip for wet fish preparation

Specify the fish species and size, whether the knife will skin fillets or cut along bones, and the intended cleaning method. Agree blade length, thickness, taper, tip profile, edge grind and flexibility against an approved sample. State the steel grade, heat treatment and hardness acceptance criteria. Trial the sample on representative fish, checking clean cuts, control around bones and whether the blade returns straight after flexing.

Agree handle material, texture, finger clearance, tang construction and sheath retention. Test grip with wet hands and fish residue. Food-contact materials must be safe and suitable for their intended use. Request a food-contact declaration and supporting reports matching the blade, coatings and handle materials supplied. Check every design against the banned knife list before ordering; confirm any import or sale restrictions and applicable exemptions with the relevant authority.

Worked duty example

Illustrative example, not a quote: Illustrative stock order of fixed-blade fish filleting knives for a catering wholesaler under 8211 92 00 00, invoiced at £30,000 free on board, with £2,000 of freight and insurance to the UK. The customs value is £32,000. Duty at 8% is £2,560. Import VAT at 20% is charged on the customs value plus duty, £34,560, so it is £6,912. Import taxes total £9,472; a VAT-registered importer can usually reclaim the VAT, so the lasting cost is the £2,560 of duty. The import duty and VAT guide explains each step.

Inspection checklist

Blade: compare dimensions, taper and flex with the approved sample; check straightness, tip damage, burrs, sharpness and edge retention after a representative filleting trial.

Handle: check wet grip, moulding seams, tang attachment and movement under pulling and twisting; inspect gaps that could trap fish residue.

Materials and cleaning: match material certificates and food-contact reports to the supplied product; inspect corrosion and handle changes after the agreed cleaning trial, including dishwasher testing where claimed.

Packing: check sheath fit and retention, tip protection and whether edges can cut through retail packs or cartons; compare care instructions and product identification with the agreed artwork.

What goes wrong

A blade can match the catalogue outline yet be too stiff for skinning or too flexible to control around bones. Uneven grinding leaves a thick heel or fragile tip. Poor heat treatment causes rolling or chipping, while incomplete polishing and unsuitable steel can leave corrosion around the edge. Compare production samples with the approved knife through cutting, flexing and cleaning trials.

Smooth handles become difficult to control when wet, and loose joints or moulding gaps collect residue. A sheath that fits the sample may release a thinner production blade. For resale, confirm applicable age restrictions, any Scottish kitchen-knife exception, and online age-verification and delivery requirements with Trading Standards. Agree the sales and delivery process before dispatch.
