Duty and controls for vinegar-preserved mushrooms

Read from the UK Trade Tariff on 30 September 2026, heading 2001 covers edible plant products prepared or preserved by vinegar or acetic acid. Its mushroom lines carry 16% duty for goods from China, with no listed anti-dumping or countervailing duty and no suspension. The table shows whole and sliced buying formats under the same recipe-based codes.

The supplied tariff record attaches veterinary control and import control of organic products to the mushroom lines. Confirm the veterinary requirement for the complete recipe with your customs broker before shipment. Organic mushrooms imported from China into Great Britain require a Great Britain certificate of inspection; agree the organic paperwork with your broker before ordering.

Confirm the commodity code using the mushroom description, preservation method and complete recipe, including added sugar. The no-added-sugar line is 2001 90 50 10; the other mushroom line is 2001 90 50 90. See the wider vinegar-preserved vegetables guide for the rest of this heading.

Specify the mushrooms, vinegar recipe and pack

Name the mushroom species and agree whole, sliced or pieces, cap size, stem trimming, colour and firmness. Set acceptance criteria for broken caps, excess stems and visible grit. Approve a sample of the finished preserved product, since the texture after processing matters more than the appearance of the raw mushrooms.

Fix the vinegar or acetic acid recipe, added sugar, salt, spices, drained weight and fill level. Agree acidity, heat treatment, shelf life and storage instructions with the factory. Ask for evidence supporting the proposed preservation process and shelf life rather than accepting a tasting sample as proof of stability.

Food must be safe and legal before import into Great Britain. Labels must show drained net weight for mushrooms packed in liquid, alongside net quantity. Check emphasised allergens and the UK food business name and address. Jars, lids and seals must be suitable for acidic food.

Worked duty example

Illustrative example, not a quote: Illustrative wholesale order: 20 tonnes of unsweetened mushrooms in vinegar; FOB and freight values are illustrative under 2001 90 50 10, invoiced at £16,000 free on board, with £2,500 of freight and insurance to the UK. The customs value is £18,500. Duty at 16% is £2,960. Import VAT at 20% is charged on the customs value plus duty, £21,460, so it is £4,292. Import taxes total £7,252; a VAT-registered importer can usually reclaim the VAT, so the lasting cost is the £2,960 of duty. The import duty and VAT guide explains each step. This assumes the goods are standard-rated for VAT. Most food for human consumption is zero-rated, and animal feed can be too, in which case no import VAT is due, so check the rate for your product in HMRC's VAT Notice 701/14.

Inspection checklist

Mushrooms: open samples and compare species, cap size, cut, firmness and colour with the approved sample; check for grit, excessive stems and broken pieces.

Drained weight: drain and weigh sampled packs against the label and purchase specification; compare fill level and headspace across the lot.

Acidity and closures: compare acidity results and processing records with the agreed specification; check vacuum, leaks, bulging lids, corrosion and damaged glass.

Labels and batch records: compare the ingredient and allergen wording with the actual recipe; match batch marks to reports and check carton protection. Use the quality inspection guide to prepare the inspection brief.

What goes wrong

A jar can look full while containing too much liquid and too few mushrooms. Excess stems, broken caps, grit and soft texture can also make an otherwise presentable lot unsuitable for the buyer's menu or retail pack. Record these acceptance criteria before production and inspect opened packs.

Poor acidity control or inadequate heat treatment can allow spoilage and bulging lids. Acidic contents can also expose unsuitable closure materials, while loose dividers allow glass breakage in transit. Hold leaking or swollen packs for investigation, compare affected batches with production records and resolve the cause before reordering.

Frequently asked questions

What is the UK import duty on mushrooms in vinegar from China?

Both mushroom lines carry 16% in the supplied tariff reading. No anti-dumping duty, countervailing duty or suspension is listed for them.

Does added sugar change the mushroom commodity code?

The supplied tariff separates mushrooms without added sugar, 2001 90 50 10, from other mushrooms, 2001 90 50 90. Both carry 16%; confirm the complete recipe before declaring.

Do pickled mushroom jars need a drained weight?

Yes. Solid food packed in liquid must show drained net weight. Check the mushrooms after draining, rather than relying on the total jar weight.
